Lady's Finger Poriyal / Vendakkai Poriyal / Okra Poriyal

Okra Poriyal is a tasty South Indian recipe that goes well with rice. I love this recipe and make this very often at home.  This is a simple side-dish which is very easy to make but has certain criteria to be followed, because of the sticky nature of the Okra. Lady's finger is good in treating bowel problems especially constipation due to its excellent laxative property. So the dish is both healthy and delicious. So now lets see the preparation.


INGREDIENTS

  1. Lady's finger/Okra/Vendakkai - 200 grams 
  2. Big onions - 2
  3. Cumin seeds - 1/2 spoon
  4. Urad dal/Black gram/Ulutham paruppu - 1/2 spoon
  5. Mustard seeds - 1/2 spoon
  6. Salt 
  7. Oil - 4 spoons (More oil would be better to avoid stickiness)

PREPARATION METHOD

  • Never wash  Lady's finger/Okra/Vendakkai just before preparation, it will make the recipe more sticky. Wash it and dry it and then store okra for future use. Or if you want to use immediately just wipe the okra with a wet cloth. 
  • Chop okra into smaller pieces and set aside.
  • In a pan add oil, after it heats up add mustard seeds and let it splutter, then add the cumin seeds, urad dal and saute.
  • Then add chopped onions, salt and fry well.
  • After onion gets cooked add the chopped okra and fry well.
  • At first it will seem sticky, but keep frying and at one stage it will stop being sticky.
  • Fry till the okra gets cooked well.
  • Remove from flame and serve.

TIP 1: Pour more oil if you find okra more sticky. Even during the preparation you can add oil.
TIP 2: Don't use Gingelly oil during the preparation, it will give a raw smell. You can use Sunflower oil instead!!
TIP 3: Beginners who try the recipe for the first time should not panic when the dish turns sticky after addition of okra, just keep stirring, your dish will lose its stickiness after few minutes. So no worries.
TIP 4: More onions will make the recipe tasty, and make sure to fry the onions well.


If you follow my instructions carefully you will get a yummy side-dish!!!
