Aloo Masala | Potato Masala | Urulaikilangu Masala

Aloo Masala is a simple and dry masala that goes well with sambar, rasam, dal and rice or any kind of Indian bread varieties. It is spicy, delicious, yet you don't have to put much effort into the recipe. Its so simple to prepare. If you are looking for spicy yet easy to make potato recipe for your sambar rice, then this is the recipe for you. Try it and you will love it. 


INGREDIENTS

(Serves 4 people)
  1. Potatoes - 2
  2. Pearl onions - 10 
  3. Ginger - 1 inch long pieces (crushed) 
  4. Garlic - 2 pods (crushed along with skin, you can peel off the skin too)
  5. Red chilli powder - 1.5 spoons
  6. Turmeric powder - A pinch
  7. Mustard - 1/4 spoon 
  8. Black gram / Urad dal - 1/2 spoon 
  9. Salt - As per taste 
  10. Oil - 4 to 5 spoons 

PREPARATION METHOD

  • Peel skin and chop potatoes into small cubes and set aside, also peel and chop onions into bigger pieces and set aside.
  • In a pan/wok add oil, after it heats up add mustard leaves and let it splutter.
  • Then add urad dal and saute till it turns brown.
  • Now add chopped onions, crushed ginger, crushes garlic saute well until raw smell leaves.
  • Now add red chilli powder, salt and turmeric powder and stir well until the raw smell leaves, cook on low flame.
  • Then add chopped potatoes and stir well, add 1.5 cups of water and cook on low flame.
  • Cook until water content reduces and the potato gets soft and cooked well.
  • Remove from flame and serve.
TIP 1: Don't over cook the potatoes it will get mashed up, but if you love that consistency you can make it so.

TIP 2: Adding 1.5 spoons of red chilli powder will make the potato recipe spicy, so you can reduce the spiciness according to your wish.

TIP 3: Ginger and garlic are completely optional.


Spicy and delicious potato dry masala is now ready!! Serve with Sambar ice or dal rice and enjoy!!
