Hot Honey Chicken (Indian Style) & Update regarding 'The Master Chef Contest'

Honey chicken is one among the favorites for many chicken lovers. Basically it is a Chinese style recipe with a sweet flavor and some mild spices, but we Indians are addicted to spicy recipes especially me and my hubby. So adding some spices really made this recipe yummy and spicier. Not much spices, just the addition of red chillies itself makes it hot enough. Using skinless chicken avoids obesity and cholesterol problems, because the skin contains about 70% of the cholesterol. I have made this version in my own style, am a chicken lover and so I can never go wrong with chicken recipes. You and your kids will love it, just try once. Serve it as side-dish for fried rice, pulao, and Indian bread varieties. You can try new versions or use mushrooms or cauliflower to substitute chicken. Lets see what is required and how to prepare it.

INGREDIENTS

(Serves 3)
  1. Chicken - 300 grams (Preferably boneless pieces)
  2. Capsicum - 1/4 cup (diced/chopped)
  3. Honey - 3.5 spoons
  4. Soya sauce - 1 spoon + 1 spoon
  5. Red chilli sauce - 1 spoon + 1 spoon 
  6. Red chillies - 6 (For making red chilli paste)
  7. Red chilli powder - 1 spoon
  8. Pepper powder - 1/4 spoon
  9. Baking powder - 2 pinches
  10. Ginger-Garlic paste - 1 spoon + 1/2 spoon
  11. Corn flour - 4 spoons 
  12. All purpose flour / Maida - 4 spoons
  13. Salt - As per taste
  14. Oil - As required

PREPARATION  METHOD

  • Wash chicken pieces well in water and chop into medium sized cubes and set aside. (Boneless pieces preferred to get it cooked soon)
  • Soak red chillies in hot water for 30 minutes and make a paste of it (red chilli paste) and set aside.
  • Meanwhile, make a thick batter of the following with consistency similar to dosa batter and set aside.
(Flour Batter)
1. Corn flour - 4 spoons
2. All purpose flour / Maida - 4 spoons
3. Ginger-Garlic paste - 1 spoon
4. Baking powder - 2 pinches
5. Salt - As per taste
  • Now make the marinade for chicken. Make a paste of the following;
(Honey Paste)
1. Honey - 3 spoons
2. Red chilli powder - 1 spoon
3. Pepper powder - 1/4 spoon
4. Soya sauce - 1 spoon
5. Red chilli sauce - 1 spoon 
6. Salt - As per taste 

  • Marinate the chicken with the prepared marinade paste (honey paste) for an hour. 
  • Then dip the marinated chicken pieces in the flour batter and deep fry the pieces on low flame until it turns golden dark brown and crisp. Set aside. This may take a maximum of 10 minutes time. (Chopping into smaller pieces makes it get cooked soon)
  • In a pan/wok add 2 spoons of oil, add 1/2 spoon ginger garlic paste and saute well until the raw smell leaves.
  • Then add a spoon of soya sauce, a spoon of prepared red chilli paste, red chilli sauce, 1/2 spoon of honey,  little water and mix well.
  • Add diced capsicum and saute well.
  • Add a pinch of salt and add the fried chicken pieces and saute well.
  • Set on low flame close the pan with a lid and cook for 2 mins.
  • Remove from flame and serve.

TIP 1: Add a pinch of Ajinomoto if necessary while making the final saute.

TIP 2: If you don't want too much of spiciness avoid red chilli paste.

TIP 3: Add egg white while making the flour batter to make it more tastier.

TIP 4: Add minced or chopped ginger and garlic while making the final saute instead of adding ginger garlic paste if you wish. If you are going to add ginger-garlic paste be careful, because it will splutter.

TIP 5: We are going to use only a spoon of red chilli paste we have prepared, so the rest can be stored and used in other gravies. Also increase or decrease the spiciness according to your taste.


Yummy and Spicy Hot Honey Chicken is now ready!! Its a real treat for chicken lovers and kids!! Enjoy with your favorite rice variety or bread variety!! Enjoy a home-made healthier restaurant style preparation this weekend :)

Update regarding 'The Master chef contest'

    CAN U TELL HOW LONG DOES IT TAKE TO COOK THE CHICKEN .IT WAS TAKING QUITE A LONG TIME, I WAS NOR SURE.IN ANOTHER NON VEG RECEIPE U HAVE SAID NO GINGER NO GARLIC , I HAVENT HEARD ABT IT , IS IT GOOD TO CONSUME LIKE THAT.

    1. Hi Meena :)

      You must use boneless pieces for it to get cooked soon and also the chicken pieces should be medium sized pieces big ones definitely takes time to cook, so chop them into smaller pieces after you get them from the butcher shop, deep fry them or shallow fry the however it takes not more than 7 minutes. If its like old chicken or country chicken then it may take time but not more than 10 minutes Meena. I have used broiler here and it got cooked really fast. Since you are frying it first you wont have the necessity to cook longer while sauteing.

      Regarding the no ginger no garlic recipe, ginger and garlic helps get rid of the digestive problems that may occur while consuming non veg recipes and also helps to get rid of the microbes present in the recipe or under cooked meat. But they are not the only ingredients that will ease digestion or get rid of the microbes etc there are lots of other spices and ingredients like cumin seeds, fennel seeds, pepper powder, turmeric powder, salt, onions which all ease digestion and acts as alternatives to ginger or garlic etc, so nothing to worry about :) I will have definitely added such ingredients to avoid health probs, I think you are talking about the mutton recipe, do try it out taste-wise and health-wise its really good :)
