Naatu Kozhi Soup / Chicken Clear Soup (Indian Style)

Naatu kozhi (Country chicken) soup is a very authentic South Indian delicious and healthy soup. Its very soothing and helps get rid of cold and throat infections. Country chicken is best when compared to broilers due to the increased health benefits. Broiler chicken are said to be vaccinated with growth hormones for increasing growth and flesh, so when we consume it, it can harm our hormone systems also causing imbalance in the hormones secretion, thereby affecting growth. It is also advised to therefore cook broilers for atleast an hour (60 minutes) to get rid of the vaccinated hormones, which is impossible because chicken gets cooked in just 10 minutes and overcooking will make it mushy. So country chicken/Naatu kozhi is best advised when compared to broilers.  Everything has turned out commercial and business. So we must be more aware.

Coming back to the recipe, for kids and people who are too weak with poor immune system, this is a best supplement. Serve it once a week to those who are easily susceptible to sickness. Also this soup is a must for women after labor and breastfeeding mothers. It helps regain all the lost nutrition and strength. This soup gives energy and is very nutritious. Although we all love to have Chinese yummy soups we must appreciate preparing and having these soups weekly once to improvise health. Also it is very easy to make and serve. Lets see how to make this simple and delicious soup.

INGREDIENTS

(Serves 4)

  1. Chicken (Naatu Kozhi) - 1000 grams i.e. 1 kg
  2. Pearl onions/Shallots (chopped) - 1 cup
  3. Tomato - 1/2 of a tomato (Optional)
  4. Coriander leaves - Few (Optional)
  5. Peppercorns - 1/2 spoon
  6. Cumin seeds - 1/2 spoon
  7. Pepper powder - 1/2 spoon
  8. Water - 4 cups
  9. Salt - As per taste

PREPARATION METHOD

  • In a pressure cooker add the following ingredients and pressure cook for 15-20 minutes;
(Pressure cook)
1. Chicken (Naatu Kozhi) - 1000 grams i.e. 1 kg
2. Pearl onions/Shallots (chopped) - 1 cup
3. Coriander leaves - Few
4. Peppercorns - 1/2 spoon
5. Cumin seeds - 1/2 spoon
6. Water - 4 cups
  • After the pressure gets released from the cooker, open the lid and strain the soup using a strainer.
  • Add necessary salt, pepper powder and serve!!
  • Use the remaining chicken pieces for making chicken pepper fry, because it won't be suitable for making curries or gravies.

TIP 1: Addition of coriander leaves and tomatoes are optional, you can add or omit according to your wish.

TIP 2: Add salt only after preparing the soup.

TIP 3: Add some of the cooked chicken pieces into the soup while serving if you wish.

TIP 4: Since all the juiciness have been removed from the chicken it won't be suitable for making gravy, instead make pepper fry or deep fries using the chicken pieces.
