Maida biscuits are diamond shaped deep fried biscuits found in almost all the bakeries in Tamil Nadu, this has been my favorite since childhood days. Maida biscuits are sweet, crisp and yummy and makes a great snack. It is so easy to make and requires very few ingredients. Using coconut oil in the preparation gives a good flavor and aroma, but still you can use sunflower oil. You can make salty and spicy biscuits too using the same method I'll post the salty biscuit version soon. Now lets see what's required and how to make these sweet crunchy biscuit version.
INGREDIENTS
(Makes snack for 3)- Maida / All purpose flour - 1 cup
- Powdered sugar - 1/2 cup
- Salt - Two big pinches
- Vanaspathi (Dalda) or Butter - 1 spoon
- Coconut milk - 1/4 cup
- Coconut Oil - For deep frying (You can also use Gingelly oil or Sunflower oil)
PREPARATION METHOD
- In a bowl add all the ingredients (except oil) and make a soft dough out of it, like you would do for making chapati.
- Leave it aside for a few minutes so that the sugar blends well with the dough.
- Flatten the dough using a rolling pin into thinner chapatis and make diamond shapes out of it using a knife.
- Heat a pan of oil and after it heats up well deep fry the pieces until they turn slightly golden brown in color. Please don't crowd the pan.
- Remove from flame and serve.
- You can store them in airtight containers after they cool down.
TIP 1: See that the dough is not too sticky. If so dust more flour while flattening them into chapatis.
