Karupatti coffee; this is not the authentic version but the simplest easiest coffee drink where I have replaced sugar with palm jaggery. Believe me this coffee so refreshing and better in terms of health, than sugar flavored one. Palm Jaggery is one of the best and healthiest substitute for sugar and is a good mineral source. Sugar has said to be very harmful and reading recent researches regarding those drastic effects that sugar can cause is really troubling. I recently read an article and found that sugar is the major cause for obesity, this is one old found fact but the newest and shocking fact is, sugar tends to feed cancer, isn't that sounding too scary? Also sugar weakens eyesight, causes decreased activity, hypertension, causes cardiovascular diseases and osteoporosis. Overall I guess sugar is disaster disguised in sweetness. So when we have so much of controversies going on its better to skip sugar and replace it with some healthy sweetener. It is not necessary to totally forget the sweet flavor, we definitely need different flavors, so instead of fully forbidding it replacing will be the better idea. I would go for honey or palm jaggery. Palm jaggery preparation does not involve any chemicals processing, hence unrefined, is purely natural, aids in digestion, cleanses system, has antioxidants, promotes muscle, nerve and organ health and is rich in nutrients and vital minerals such as iron, magnesium, phosphorous and potassium. With coffee, palm jaggery goes really well, karupatti is even said to relieve migraines, so why wait for do try and let me know how refreshing it was? Do not try with instant coffee powders, the taste will not be that good.

INGREDIENTS
Makes 2 cupsTotal Preparation Time -
- Palm Jaggery - 2 tablespoons (crushed)
- Milk - 250 ml
- Water - 200 ml
- Ground coffee powder - 2 tsp (not instant coffee powder; increase according to your taste)
PREPARATION METHOD
Method 1:
- Take milk in a saucepan and boil well. Then remove from flame and set aside.
- Now take a sauce pan and pour water into it, add coffee powder place on flame and boil well for a minute or two and remove from flame.
- Strain well and add into milk. Then add the crushed palm jaggery (karupatti) and stir well.
- Once done strain again to remove impurities that might be present in Karupatti/Palm Jaggery.
- Serve hot!!

- Take milk and water in a sauce pan and add coffee powder. Boil for a minute or two.
- Strain and add crushed palm jaggery.
- Stir well and strain again to remove impurities.
- Serve hot!!
TIP 1: Increase or decrease coffee powder and palm jaggery according to your taste
TIP 2: Instant coffee powder does not work well so use ground coffee powder.
TIP 3: Do not add palm jaggery to milk and boil together it will curdle the milk.
TIP 4: To make coffee flavorful, you can add 2 pinches of dry ginger powder to the coffee.
