Kozhi Vindhari / Chicken Vindhari

Chicken Vindhari is a traditional Chettinad recipe from Tamil Nadu. It is a very tasty gravy style recipe that is served one among the varieties in any chettinad festival treat. Chettinad is well known world wide for its recipes especially they excel in the non-veg varieties. If you are a fan of spiced gravies then you must try this one. And this is one among the special cuisine of chettinad recipes. The gravy is very rich and delicious and you will agree with me after trying it. It matches well with Chapati, Roti, Parota and Rice. 


INGREDIENTS
  1. Chicken - 500 grams 
  2. Onion - 1 
  3. Coconut paste - 1/2 cup
  4. Dry red chillies - 10 
  5. Coriander seeds - 1 spoon 
  6. Cumin seeds - 1 spoon 
  7. Mustard seeds - 1 spoon 
  8. Poppy seeds - 1 spoon 
  9. Salt - As per taste
  10. Gingelly oil - 5 spoons

PREPARATION METHOD
  • Dry roast the following separately one by one in a wok; (i.e. roast the spices without oil in a wok)
        • Dry red chillies 
        • Coriander seeds 
        • Cumin seeds 
        • Mustard seeds 
        • Poppy seeds 
  • Grind the dry roasted spices into fine powder and set aside.
  • In a pan add oil, after it heats up add sliced onions, and saute well until it becomes translucent.
  • Then add the prepared spice powder and stir well. 
  • Add 1/2 cup of water, stir well and cook until the raw smell leaves.
  • Then add the chicken pieces and stir well.
  • Cook on low flame for 5 minutes.
  • Then add the coconut paste and a cup of water and cook on low flame.
  • Stir occasionally and cook on low flame until the chicken gets cooked well. 
  • To get the best consistency cook for 20 - 30 minutes.
  • Add water in between if necessary. 
  • After the chicken gets soft and well cooked, and oil peeps out remove from flame.
  • Serve!

TIP 1: The mustard gives a light bitter taste, if not cooked well, so cook well to get the perfect flavor. 

TIP 2: Top up with water if necessary and strictly cook on low flame to get the best texture and flavor.

  4. I simply love this masala with poppy seeds and other spices ..non-veg dishes come out so tasty.. we use a lot of it in Andhra dishes too.
