Red Hot Chicken Curry | Without Coconut

Red hot chicken curry is a spicy, aromatic and simple recipe made with Indian spices. It goes well with Rice, Idli, Dosa and all Indian bread varieties. The recipe tastes so good but it is very simple to prepare. I always opt for skinless chicken because the skin consists of approximately 75% of the total fat, but this time I preferred taste, so opted for chicken with skin, once in a while won't hurt you and this recipe tastes good only when you use chicken with skin. I love this curry with crispy dosas, yum!! Now lets go to the recipe.


INGREDIENTS
(Serves 3 People)

  • Chicken - 500 grams
  • Onions - 3
  • Tomatoes - 2 
  • Ginger-Garlic paste - 1 spoon 
  • Dry red chillies - 2 
  • Red chilli powder - 3 spoons
  • Turmeric powder - A pinch 
  • Bay leaf - 1 
  • Cardamom pods - 2 
  • Cloves - 2 
  • Cinnamon stick - 2 inches long piece 
  • Star anise - 1 
  • Oil - 5 spoons 

PREPARATION METHOD
  • Wash chicken pieces well in water and set aside. 
  • Chop onions and tomatoes into thin slices and keep aside.
  • In a pan add oil, after it heats up add all the spices; bay leaf, cardamom pods, cloves, cinnamon stick, star anise and dry red chillies and saute for a few seconds.
  • Then add the sliced onions and saute well till it turns transparent. 
  • Now add red chilli powder, turmeric powder, salt and stir well.
  • Add ginger garlic paste and stir well.
  • Then add the tomatoes, sprinkle some water and stir well.
  • Cook on low flame till the tomato slices becomes pulpy and mixes well with the masala.
  • Then add the chicken pieces and add water till it gets immersed well.
  • Cook on medium flame for 20 minutes.
  • Check for water and add water if necessary, until the chicken gets cooked.
  • The curry should not be watery if it is too watery then place on low flame for 5 minutes until it reaches the requires consistency. 
  • Remove from flame and Serve!! 

TIP 1: If you don't want it too spicy then reduce the amount of red chilli powder to 2 spoons.

TIP 2: You can also prepare lamb curry with the same method.

TIP 3: The more onions you add the better it will be i.e. Use lots of onions for this curry.

Spicy Red hot chicken curry is now ready!! Have it with crispy Dosa, Rice etc!! Am sure it will satisfy your taste buds!!

  18. that was the fastest and easiest chicken curry recipe i have ever tried and it tasted nice too. I added some pepper as I like it really spicy and some vegetables while adding the tomatoes as well.
