Aatu Kaal Soup / Lamb Leg Soup - South Indian Style


Lamb leg soup is a very authentic soup recipe from South India, some prepare it spicy whereas my version adopted from my Mom is mildly spiced but well flavored. It is such a delightful and tasty soup recipe that is very healthy too, it is good for kids with a poor appetite. My granny used to prepare this soup on weekends and with the leftover legs she used to make gravy that tastes awesome, she adds a special ingredient love that makes it more special. Miss her and her love but still am happy that I have her recipes with me atleast. Back to the recipe mutton legs are not fleshy but has fat content, they are also packed with minerals and also tastes great with any preparation, this soup tastes great, try it and you will agree with me; come lets get to know how to make the recipe.


INGREDIENTS

(Serves 2 glasses/bowls)
  1. Aatu Kaal / Lamb Legs - 4 (Below the thigh pieces)
  2. Shallots / Pearl onions - 10 (Peeled and chopped into two)
  3. Tomato - 1 small one (chopped into bigger pieces or chunks)
  4. Garlic pods - 3 (Peeled)
  5. Coriander leaves - Few (Optional) 
  6. Peppercorns - 1/2 tablespoon 
  7. Cumin seeds - 1/2 tablespoon 
  8. Turmeric powder - 1/4 teaspoon 
  9. Pepper powder - As required 
  10. Salt - As per taste 
  11. Water - 4 cups


PREPARATION METHOD

  • Add all the above ingredients (except pepper powder) into a pressure cooker, close the cooker with a lid and place on flame.
  • After the steam starts to ooze out of the nozzle, place the whistle and simmer the flame. Cook on low flame for 30 - 35 minutes and remove from flame. 
  • After all the pressure gets released, remove the whistle and open the cooker.
  • Strain and serve the clear soup. Add salt and pepper as per taste. Garnish with coriander leaves if you wish.

TIP 1: You can avoid the addition of coriander leaves, tomato, and garlic, it will still taste good.

TIP 2: If the lamb leg does not get cooked properly cook for another 10 minutes and then serve.

  15. soup looks great.. but i can't taste it dear be'coz am veg.. if my brother seems this he asked to mom to prepare instantly... n he always tells me have non-veg pappa... yes! he calls me pappa...
