Easy Cream Of Chicken Soup


Cream of chicken soup is one of my favorite soups, its so creamy, rich, yum, looks delectable and the best part is its a chicken recipe, as most of you know I love chicken and if I don't post this recipe am not doing justice to my love affair with chicken. This soup is a great treat for chicken lovers and preparing it at home helps you get a healthier version. And this is one big hit at home, also the preparation method is so easy, I haven't used chicken stock here yet it tastes so good. Serve this creamy soup with hot and spicy starters and a piece of toast. Its so filling, creamy and has a lip-smacking taste with a mild sweetness, though this is a bit calorific having this soup once in a while is not going to hurt. 

I have added thin carrot strips to make it look appetizing, but its not actually needed, you can add some spring onions or celery according to the availability of the ingredient. Adding Ajinomoto is something that I don't prefer much due to the controversies spoken about it,  so here I have avoided the use of Ajinomoto but still if you want to enhance the flavor of the soup you can add some, even without the addition is tastes great. Vegans can try the same with button mushrooms, just follow the same preparation method but add more mushrooms according to your taste. On a cold day, a bowl of this piping hot delicious soup will be definitely comforting. Now lets see how to make this creamy soup.

INGREDIENTS

Sevres 2 bowls 
Total Preparation Time - 20 minutes
  1. Chicken - 4 medium sized pieces (boneless) 
  2. Chopped big onion - 1 spoon (1/4 of an onion)
  3. Chopped garlic - 3/4 spoon (2 garlic pods)
  4. Water - 250 ml (1½ cups)
  5. Maida / All purpose flour - 3 tablespoons 
  6. Milk - 1/2 cup (50 ml) 
  7. Fresh cream - 5 spoons 
  8. Pepper powder - 1/4 spoon 
  9. Salt - As per taste
  10. Sugar - 1/4 spoon 
  11. Carrot - A small piece (Optional) 
  12. Butter - 2 spoons 

PREPARATION METHOD

  • Wash chicken pieces well in water and chop into smaller pieces or strips and set aside. Discard bone if any, use breast pieces if possible. 
  • Take a carrot piece and slice it small strips or pieces. 
  • Place a sauce pan on flame and add butter to it. When it starts to melt add the chopped garlic and onion, a pinch of salt and saute for a few minutes until the chopped onion turns translucent. 
  • Now add one spoon of maida and stir well see that the maida turns into a paste. 
  • Then add the chicken pieces and saute well for a minute. 
  • Pour water and add pepper powder and salt and switch on to low flame and let the soup undisturbed until the volume reduces to half of its original volume. This may take 5 to 8 minutes
  • Now take a cup add milk, 1/2 cup of water and the remaining maida (All purpose flour) and mix well see that there are no lumps. Pour this into the boiling soup, add sugar and stir well. 
  • Add the carrot strips and give a stir and remove from flame immediately. Add pepper and salt according to your taste and serve!! 



TIP 1: Do not keep the soup on flame for a longer time it will thicken too much and wont have the drinking consistency. If it gets thickened just add some water and give a stir. 

TIP 2: Adding carrots makes it looks nice and also gives a slight crunchy bite, you can add if you wish or avoid them. You can use spring onions or celery instead. 

TIP 3: Vegans can try the same with mushrooms. 



Lip-smacking Creamy Chicken soup is now ready!! Serve with a hot spicy appetizer and enjoy!!
