Mini Banana Walnut Cake Using Pressure Cooker | |Pressure Cooker Cake | Christmas Recipes



When you think about Christmas recipes all that comes to your mind is about cakes and bakes. The beautifully decorated cakes in the bakeries just attracts anyone who doesn't even have a sweet tooth. Many of us would love to try make a cake at home, but what if you don't have an oven at home? here is an alternate option, the easy pressure cooker method. Try this easy peasy way to bake a cake and surprise your guests and family members. Today's special is a banana cake in which I have added walnuts to make it more delightful, but you can add some cashews and raisins as they originally do. A very positive note about this cake recipe is it does not need much of baking tools, just a blender will be enough to replace the beater and to make the batter, this saves your time and energy also. This is a cake that has less flour but more bananas in it, so it does not have the airy cake texture but has a soft inside and a nice browned outside and tastes too good. This is a kind which cannot be stored for days and should be served the same day. I have tried this cake earlier and loved it so much so wanted to share this along with this special Christmas series. You can also try the same recipe using an oven also. Lets see whats needed and how to make this banana cake.





INGREDIENTS

Makes 2 small cakes 
Total Preparation Time - 40 to 50 minutes
  1. Banana - 2 (chopped)
  2. Egg - 1 
  3. Maida / All purpose flour - 6 tbsp + 2 tbsp
  4. Walnuts - 20 grams 
  5. Sugar - 75 grams 
  6. Salt - 1/4 tsp 
  7. Vanilla essence - 1/4 tsp 
  8. Ghee - For greasing the cake moulds 
Extras You Will Need 
  • Pressure cooker (remove the whistle/regulator, you won't need it throughout the whole process)
  • Mini cake moulds



PREPARATION METHOD

  • Preheat a pressure cooker in the following way. Take a pressure cooker and place its pan on flame, inside it place the separator plate and close the cooker with its lid (remove the whistle or regulator from the lid and then use it). Leave this set up undisturbed for about 10 minutes on medium flame. 
  • Chop walnuts into smaller pieces, then add a spoon of flour to it and rub well. This helps avoid the nuts from sinking in the batter.
  • To a blender add the following ingredients and blend well into smooth batter for about 3 to 5 minutes. Then add the chopped and floured walnuts into the batter and mix well.
(Batter)
1. Banana - 2 (chopped)
2. Egg - 1 (both ylk and egg white)
3. Maida / All purpose flour - 6 tbsp
4. Sugar - 75 grams
5. Salt - 1/4 tsp
6. Vanilla essence - 1/4 tsp 



  • Now grease the cake moulds with ghee, then dust with 1 tbsp flour, tap the moulds well and remove the extra flour from the moulds and and set aside.
  • Pour the batter into these greased and floured moulds (do not pour till the brim). Place into the preheated cooker and cook for 40 minutes on low flame. Open the lid and insert a toothpick or knife , if it comes out clean then the cake is ready. 
  • Remove from flame, the cake would slide out of the moulds easily, so no need of loosening the cakes.
  • Cool completely before serving.



TIP 1: This is a cake in which banana dominates the recipe and the flour ratio is less. So you will not get the airy texture of cakes. But the cake remains soft and delicious. 

TIP 2: You can substitute walnuts with cashews and raisins also. Just make sure to dust them with flour so that they do not sink while cooking. 

TIP 3: Do not store for more than a day. 

TIP 4: When the cake is ready you will be able to smell this and this is the best trick to find out if cakes are ready.



Delicious banana cake is now ready!! Serve plain or with a scoop of vanilla ice

  8. Wow! This is interesting...So there is no water in the cooker. Just the cooker with the plate inside right? Would Stainless steel cooker work too? I mean, would it not become black and burnt without water?

    1. Yeah Sandhya.. No water and no whistle/regulator too.. Just the cooker, plate and a lid will be enough. Yes a stainless cooker will work too but there will be slight brownish coloring on the cooker but it wont look burnt...The dry heat is what that will cook/bake the cake, so we should not add water, adding water makes it like steaming process. The cooker in my pic is what I have used and it did not change color too.

  27. Hi dear...what's the purpose of placing the separator in the pressure cooker? I have never used it before...

    1. Hi dear :) Placing a separator gives some gap between the pressure cooker bottom and the cake moulds, this avoids the direct heat that can directly pass into the cake moulds. Uniform spread of dry heat is necessary to bake a cake in the pressure cooker and without a separator it is quite impossible. Try using a separator, you will definitely feel that the cake has got cooked evenly.
