Snow Pudding | Egg White Pudding | Christmas Dessert | Christmas Recipes



Snow pudding is a very traditional dessert recipe served in certain European countries during Christmas or new year. Though it is not an Indian dessert I wanted to add this to my special Christmas series, as it perfectly suits the season. Yesterday I had posted my first Christmas special recipe Star pops, check it here if in case you have missed it. Snow is something that brings in the Christmas feel in many places, so I thought of preparing a recipe relating to snow and ended up  making this pudding, its so easy to make and has a light fluffy texture and the best thing is it looks like snow. This pudding is again a No Bake No Cook recipe like my previous Christmas recipe, the star pops. Just whisk all the ingredients well together, refrigerate, drizzle some sauce and serve. Adding essence eliminates the mildest egg smell that egg whites may have. Try this and serve as dessert in on Christmas eve or new year eve after meal, am sure your guests and family members would love it. This pudding is too sweet and high in calories, but perfectly fits a celebration. After preparation and refrigeration it sets well so while serving scoop it using a ladle and serve in small bowls or sherbet glasses, drizzle your favorite sauce and serve, I used condensed milk but you can use raspberry sauce or custard sauce as they traditionally do. There are many versions but here is the simple one just for you. Using an electric blender definitely saves time and energy, I did not have power here at my place and had to use my manual whisker, it made me bit tired and took some time to turn out fluffy, but the end result was just splendid. Each spoon of pudding just melts in your mouth just like snow.



INGREDIENTS

Makes 3 bowls full or serves 4 to 5 people
Total Preparation Time - 3 hours (takes just few minutes for preparation but refrigeration part takes time)
  1. Egg white - From 4 eggs 
  2. Sugar - 150 grams
  3. Vanilla essence - 1/8 tsp 
  4. Gelatin - 1 tsp 
  5.  Lemon juice - 1 spoon 
  6. Cherries - Few 
  7. Condensed milk - As required (or prepare custard sauce check tip 3 to make custard sauce)



PREPARATION METHOD

  • To a bowl of hot water (50 ml) add gelatin and stir well until it dissolves well. Set aside. 
  • Beat egg white well using a whisker or electric egg beater until it rises well and turns fluffy and doubles in size.
  • With a manual egg whisker it takes nearly 20 to 30 minutes (you need good patience and strength too). With an electric egg beater it takes just 5 minutes. 
  • Add vanilla essence and lemon juice whisk well, then add gelatin mixed water and sugar little by little and whisk well until it triples in size. 

  • When the mixture becomes very fluffy, pour into pudding bowls or serving bowls and refrigerate for atleast 3 hours. The texture changes and sets well, becomes so light and fluffy. It almost tastes like light and airy marshmallows. 
  • Now remove from the refrigerator, scoop some from the pudding put inside a bowl or sherbet glass pour or drizzle condensed milk (or custard sauce), place a cherry and serve!!

TIP 1: Be careful while separating egg white and yolk, even if one drop of yolk gets mixed with your egg white, it wont turn fluffy on beating. 

TIP 2: Beat it well until it turns so fluffy. Whisking or beating well is essential thing for this recipe. When you take a spoon of it and pour a thread over the egg mixture it should stand for a while. This is the perfect consistency. 

TIP 3: The authentic ones are served with custard sauce. To prepare basic custard sauce, use the egg yolks. Beat an egg yolk well and set aside. To a sauce pan add a cup of milk, and half cup of sugar and place on flame, wait until it dissolves well, then remove from flame and add the egg yolks, beat well. add vanilla essence and beat well. Place on flame again and stir until it gets thick like sauce. Remove from flame and use.

TIP 4: Electric blender is the best, but in case you don't have it you can use manual whisker, but it will take very long to turn fluffy. But be patient throughout the whole process. You will succeed.



Yummilicious and sweet snow pudding is now ready!! Serve with Condensed milk or Custard Sauce or Raspberry sauce or with any of your favorite sauce any way tastes so yum!!

    1. Yeah Priya it is almost similar to this but there are variations floating island is prepared with corn flour and with milk. Here in this dessert only egg whites are used.. Will definitely check yours :)
