Crackers are ideal for a tea-time or any get together. Have it with a dip, with some topping or even plain, it will still taste great. Here is a thin crispy type cracker with Indian flavors, the curry leaves and cumin gives a nice flavor to the baked cracker. These crackers are prepared with wheat, is butter-less, and has low calorific value hence makes a healthy snack. Try these vegan crispy and flavorful crackers am sure the Indian flavors here will make your moments splendid in every bite, moreover it is easy to prepare too. Just prepare the dough roll and shape it, bake and store or devour. You can make different shaped crackers and even spice it up even more according to your taste.
INGREDIENTS
Makes 30 - 35 crackersTotal Preparation Time - 15 minutes
- Whole wheat flour - 100 grams (1¼ cups)
- Dry red chillies - 4
- Curry leaves - From 1 sprig (nearly 10 leaves)
- Cumin seeds / Jeeragam - 1 tsp
- Peppercorns / Milagu - 1/2 tsp
- Salt - ¾ tsp (or 1 tsp if you like it salty)
- Sunflower oil - 6 teaspoons (90 ml) {use any odorless oil}
- Warm water - 30 ml (or as required)
PREPARATION METHOD
- Place a pan on flame and add curry leaves, saute on a low flame until the leaves become dry and easily crush-able. To check this take a leaf and crush it slightly using your fingers, if it crumbles easily then remove from flame. It takes just a minute or 2. (See that you do not burn the leaves)
- To the same pan add cumin seeds, peppercorns and saute for a few seconds or until you get a nice flavor (color change not needed), then remove from flame and set aside. Now saute dry red chillies for a few seconds and remove from flame.
- After the sauteed spices cools down add it to a dry blender/mixer grinder and grind it into a coarse mixture by giving a few pulses. (Do not add even a single drop of water, else it will become a paste)
- Preheat oven to 200°C (400 degrees Fahrenheit) for 10 minutes.
- Add wheat flour, salt, the ground spice mixture and mix well. Then add oil and mix well using your fingers.
- Now sprinkle warm water little by little and knead well into a stiff dough. (it should be like the chapati dough)
- Now divide dough into 3 equal portions. Take one portion (keep the other portions closed, do not let it dry) and place it on a flat surface or a pastry board (chapati board) and roll into very thin sheets using a rolling pin.
- Now transfer this sheet to a wax paper or parchment paper and cut into squares or rectangles or the desired shapes. Then gently pull the cut pieces apart so that there is some space between them. (These crackers will not expand, so too much space between them is not needed).
- Now carefully lift the wax paper or parchment paper and place it on the cookie tray.
- Place this cookie tray in a preheated oven and bake for 5 to 7 minutes or just until the crackers turn slightly golden and smells good. Keep an eye on them while baking, these will brown and burn really quick as they are very thin.
- Now remove from the oven and set aside until they cool down. (Sometimes, these may not seem crisp when hot, but after it cools down it will turn super crispy).
- Meanwhile do the same with the rest of the dough portions. Flatten, cut into desired shapes, bake, cool.
- Once they cool down, store in airtight containers. Use as needed!!
TIP 1: Always keep an eye on the crackers while baking, these will get cooked really fast.
TIP 2: Roll the dough as thin as possible to get the best crispy crackers.
TIP 3: You can use cookie cutter to get different shapes or even use your knife and cut into rectangles or squares, but take care that all the pieces are similar in size.
TIP 4: You can add more of the spices if you want a spice dominating cracker. Reduce the salt according to your taste. You can add a pinch of garlic powder too if you like its flavor.
Super crispy, healthy and easy to make crackers are now ready!! Serve with dips, toppings or plain and enjoy!! Makes a great evening time snack too!!
