Melting Moments | Easy Eggless Cookies | Christmas Recipes | Christmas Cookies

Here is an easy to make tasty buttery, eggless cookies for Christmas and New year. The cookies are very easy to make, you just need to take care that your have butter at room temperature and if your butter is ready you don't have to wait, just whisk the ingredients, refrigerate the dough and make cookies out of them. Sounding super easy right? You can bake these in advance and gift it to your family and friends and I bet it will definitely be a hit. These cookies look cute with the powdered sugar coating, which seems similar to snow! Taste-wise these are near to butter biscuits that you get in Indian bakeries, the texture is crumbly in nature and every single bite will just melt in your mouth. They make a perfect gift for Christmas, also you definitely need no occasion to bake and taste it!

INGREDIENTS

Makes 14 to 15 cookies (depending on the size)
Preparation Time - 10 minutes
Refrigeration time - 1 hour 
Baking time - 15 minutes 
  1. Maida / All purpose flour - 3/4th cup (95 grams)
  2. Corn flour - 1/4 cup (30 grams) 
  3. Salt - 1/8 tsp (2 pinches)
  4. Powdered sugar / Icing sugar - 1/8 cups (15 grams; app 6 tsps)
  5. Unsalted butter - 100 grams (Room temperature) 
  6. Vanilla essence - 1/2 tsp 

  

PREPARATION METHOD

  • Using whisk mix together maida (all purpose flour), corn flour and salt. Set aside. 
  • Take room temperature butter and add powdered sugar to it. Using a whisk, mix it well so that it creams up together. 
  • Now add the flour mixture and mix well using the whisk. You will get a soft dough. 
  • Once done cover and refrigerate the dough for an hour or until it turns firm. Do not leave too long it will become hard. If it turns out hard, just leave it out for a few minutes and proceed.
  • Line a baking tray with parchment paper or butter paper and preheat an oven to 175 to 180 degrees Celsius (350 degree Fahrenheit) for 10 minutes. 
  • Now scoop small equal portions using a spoon and roll them between your palms into balls. 
  • Place the balls on the baking tray leaving an inch gap between them. 
  • Now place the tray in the center rack of the oven and bake the cookies for about 12 to 15 minutes (175 to 180 degrees Celsius). The cookies are ready when they start to brown on the sides. Do not let it brown too much. It took 18 minutes for my cookies to get ready. This depends on your oven and the size of the cookies. So just check after 10 minutes to see if your cookies are ready. If they are not ready set some extra time say 5 minutes, stay besides and keep an eye on the cookies. 
  • Once done remove cookies from the tray and place on a wire rack and allow it to cool for 5 minutes.  
  • Then dust some powdered sugar over the cookies using a sieve/strainer. (Be generous here) I spread  butter paper below the wire rack to collect the extra powdered sugar. You can do the same. 
  • Now store the cookies in an airtight container by placing a butter paper between them. These cookies stay well for a couple of weeks.

TIP 1: Corn flour makes the cookies melt in your mouth, so do not skip adding corn flour. 

TIP 2: The cookies will have a mild sweetness as we are adding very little sugar to the dough, to compensate this we have to dust the cookies with powdered sugar, but you can just skip dusting powdered sugar over cookies and enjoy as such. 

TIP 3: If using salted butter skip adding salt here, but its better to use unsalted butter.



Buttery, tasty, melt in mouth cookies are now ready!! You can't stop with one I bet!!

    1. Hi Madhavi, I don't think you can try these cookies without an oven. Do you have a microwave with convection mode? If so you may try it.
