Chocolate Chip Muffins | Vanilla Muffins

How many of you love choco chip recipes? I do!! Top it on ice-creams or use it in your cookies or cakes, these little cuties will make your recipe look more delectable, cute and infact tasty too. Today am gonna share with you a choc chip muffin recipe that can be modified to make cupcakes too, just skip the addition of choco chips to make vanilla muffins and frost it with either buttercream or any icing to transfer it into vanilla cupcakes. If you wish to make chocolate flavored choco chip muffins then just add some cocoa powder or melted chocolate as I have mentioned in this recipe. These super simple to prepare yet these muffins are spongy, airy and tastes so heavenly. 



INGREDIENTS


Makes 6 to 7 muffins (depending on size)
Preparation Time -15 minutes 
Baking Time - 15 to 20 minutes
  1. Maida / All purpose flour - 125 grams
  2. Unsalted butter - 100 grams (Room temperature) {If using salted butter skip adding salt}
  3. Eggs - 2 (Room temperature) 
  4. Milk - 75 ml 
  5. Chocolate chips - 50 to 100 grams or as you wish (You can use semisweet, white chocolate chips or even chopped chocolate)
  6. Sugar - 100 grams
  7. Vanilla essence - 1 tsp (You can use pineapple essence too) 
  8. Baking powder - 1/2 tsp  
  9. Salt - 1/8 tsp 

OVEN / OTG SETTINGS

  • Heater / Rod select - Both
  • Shelf / Tray placement - Center 
  • Temperature - 175°C (or 180°C)
  • Baking time - 15 to 20 minutes 
  • Preheat Oven For - 10 minutes



PREPARATION METHOD

  • Preheat an oven to 175°C for 10 minutes with a wire rack/tray in the center rack of the oven.
  • Line a muffin pan with cupcake liners and set aside. 
  • Take flour, salt, baking powder in a bowl, mix well using a hand whisk or sieve twice and set aside. 
  • Now take room temperature butter and sugar in a mixing bowl and beat well using an electric beater until fluffy. (You can use a hand whisk too, but beat until the butter is creamy)
  • Add one egg at a time to the butter mixture directly and beat well after each addition, sometimes it may curdle up if your eggs are not at room temperature, but it will become alright after adding flour or after baking. But make sure that you add eggs at room temperature.
  • Now add the essence/extract and beat for a few seconds. 
  • Now using a spoon or spatula add the flour mix gradually and fold in (mix) gently (do not use a beater here). 
  • After adding all the flour, pour some milk little by little and stir well to adjust the consistency of the batter. The batter should not be thin or flowy. It should be thick. 
  • Now add the chocolate chips and using a whisk or spoon stir well. 
  • Then using a spoon or ice cream scoop take equal portions of the cupcakes and fill the muffin pan. Drop some chocolate chips over the batter. 
  • (If you do not have any chocolate chips, then just chop your favorite chocolate, like dairy milk into smaller pieces and mix with the batter. I have used them too for your reference check the pic below)

  • Now place the muffin pan on the tray in the center rack of the oven and bake in the preheated oven at 175°C for 15 to 20 minutes or until a toothpick inserted in the center of the muffin comes our clean. (Check with a toothpick or skewer after 15 minutes too see if your muffins are done, the baking time purely depends on the size of the muffins and also on the type of oven)
  • Now remove from oven and place the muffins on a cooling rack for it to cool down completely. 
  • Serve or store. 

TIP 1: Always when making muffins/cupcakes, do not bake too long, it will become crusty on the top, so just check in between do not always depend on the mentioned time in the procedure. The time will vary, depending on the size of the muffins/cupcakes and the oven. 

TIP 2: You can simply bake in a muffin pan without using any cupcake liners. 

TIP 3: The same muffin can be prepared with pineapple essence but vanilla essence is my priority. You can add any of the above said essences. Skipping the addition of choco chips makes it vanilla muffins and when you top the vanilla muffins with some frosting it becomes cupcakes.

So here we have a two in one recipe!!



If you top the muffins with some buttercream icing or any frosting, then here we have Vanilla Cupcakes :)



Tasty, soft, spongy choco chip muffins are now ready!!

  16. Hi Divya. When i did the vanilla muffins they became dry at the corners but the top was ok. Is it because of overbaking?? My otg is 30 ltr with two rods with rotisserie and fan function. I placed it center with two heating rods on. Please reply
