Sweet Corn Uthappam | Less Oil Sweet Corn Oothappam | Kid's Breakfast Recipes
Entertaining kids with recipes is definitely not an easy job! Whatever you try, however you cook, fussy kids stay fussy! However delicious it might be however attractive or creative your platter looks, kids are never really bothered. I've  just read your mind right? Yet moms never get tired trying? So here's a simple uthapam recipe for those "I-won't-give-up-moms" ;) Sweet corn is definitely every kid & grown-up's favorite ingredient and so including it in a regular dish will convert it from just the ordinary dish to exciting and favorite! Try this one and excite them once in a while, this uthapam tastes good if made with butter, as butter and sweetcorn goes well together but oil can be used too!

INGREDIENTS

Makes one small uthapam
Total Preparation Time - 10 minutes
  1. Sweet corn kernels - 1/4 cup 
  2. Dosa batter - 1 ladleful (15o ml)
  3. Salt - A pinch 
  4. Pepper powder - 1/4 tsp (Optional) 
  5. Butter / Oil - 2 tsp

PREPARATION METHOD

  • If you get raw kernels just boil or steam them for a few minutes. (If boiling add some salt and water, boil until kernels turn soft and juicy! Drain water and use the cooked kernels. If using already cooked and tinned corn kernels just drain any excess water and use)
  • Mix sweet corn with 1/4 tsp butter, a pinch of pepper and salt and set aside. 
  • Heat a dosa tawa and brush some oil/butter over it, after the pan is hot pour a ladle full of dosa batter and spread the sweetcorn mixture over dosa. 
  • Spread some oil/butter around the dosa and cover the dosa pan with a lid. Cook on low flame for few minutes or until the top gets cooked and bottom becomes crispy. Do not cook on high flame as the bottom will become burnt and the top will stay uncooked. 
  • You can flip the dosa and cook instead of the above step like we normally do for dosa and make both sides crispy but I find that it needs too much oil or butter. Also the kernels gets browned and loses flavor!
  • Remove from flame and serve.
