PREPARATION METHOD

  • Take a kadai and place on flame. Add 2 teaspoons of ghee and after it starts to melt, add wheat flour and stir well. Roast on low flame until wheat flour smells good. Do not let it burn as it will ruin the flavor of the burfis.
  • Remove from flame and rub/mix well with your fingers to remove the small lumps if any.

  • Now place the same pan on flame and add sugar, 1/2 cup water and crushed cardamom pods. Let it boil well and wait until you get the one string consistency.
  • Add the roasted wheat flour and stir well. It will form a dough soon just make sure to keep mixing well.
  • After a minute add khova and mix well. Keep mixing with a ladle until the dough gets evenly mixed up.
  • Add a teaspoon of ghee and stir. It will form a non-sticky dough.
  • After a minute remove from flame and wait until it reaches a bearable temperature.
  • Knead well and roll thin using a chapati pin. (You can place t he dough between butter paper and then roll it to avoid sticking)
  • Now cut into squares or diamonds using a knife and let it cool down. Store and serve. Stays good for up to 5 days. (Haven't tried storing more than that)

TIP 1: You can add roasted nuts too. Almonds and cashews go well with wheat flour burfi.

TIP 2: Adding ghee is optional but it gives a nice flavor you can make the same with flavorless oil too.

TIP 3: If your wheat flour hasn't got roasted properly the burfis will smell raw. So make sure you roast the flour well.
