How to make paneer uttapamLooking for a wholesome and tasty breakfast or dinner recipe? Then you must try paneer uttapam. It is made of the regular dosa batter but topped with loads of paneer and yumminess. Instead of the regular and boring dosa and idlis you can try this. Kids will love it for sure, as it looks colorful and it has paneer their favorite ingredient in it, good thing is they also get the essential nutrients from these uttapams. Uttapams are usually loaded with oil to make it crispy, but here I have reduced oil usage as it is my personal preference but you can add more oil or even ghee if you want the crispy texture. But either way this recipe tastes too good. Try to use homemade paneer as it tastes way better than the store bought ones. How to make paneer uttapam


INGREDIENTS


Makes 5 to 6 uttapams 
  1. Dosa batter - 2 cup 
  2. Paneer - 150 grams (3/4 cup) 
  3. Onion - 1
  4. Tomato - 1/2 of a medium tomato
  5. Green chillies - 1 (optional)
  6. Curry leaves - Few 
  7. Chopped garlic - 1 teaspoon
  8. Chopped ginger - 1/2 teaspoon 
  9. Red chilli powder - 3/4 teaspoon (Reduce if you have less spice tolerance)
  10. Coriander powder - 1/2 teaspoon 
  11. Cumin powder - 1/2 teaspoon 
  12. Garam masala - 1/4 teaspoon 
  13. Pepper powder - 1/4 teaspoon 
  14. Turmeric powder - 1/8 teaspoon 
  15. Salt - 1/2 teaspoon 
  16. Chopped coriander leaves - As required 
  17. Chopped mint leaves - As required (optional)
  18. Oil - 4 teaspoons (plus enough oil for drizzling around the uttapams) 

PREPARATION METHOD

  • If using store bought paneer remove from pack and wash in lukewarm water and chop into pieces, then crumble and keep aside. If using fresh homemade paneer just crumble and use as such as it will be very soft. 
  • Chop onions, tomatoes and green chillies. If serving kids don't use green chillies. (Green chillies give a very nice flavor so if you want you can remove the seeds and use the rest which helps reduce the hotness)
  • Place a pan on flame and pour enough oil into it, after it heats up add curry leaves, green chilies, chopped ginger and garlic and chopped onions. Saute well until onions seem translucent. 
  • Now add chopped tomatoes and saute for a minute.
  • Add red chilli powder, coriander powder, pepper powder, turmeric powder, garam masala, cumin powder, salt and saute until raw smell goes away. 
  • Now add the crumbled paneer and mix well. Mince well using the ladle and remove from flame after a minute. 
  • Now place a dosa pan on flame. After it slightly heats up pour two ladles of dosa batter but do not spread the batter. 
  • Since I used a non stick tawa I did not use much oil, but when using other kind of tawas, add more oil on sides, this will also make the uttapams crispy.
  • Spread some paneer mix over the uttapam, add some coriander and mint leaves and press gently with a flat ladle. 
  • Flip the dosa and drizzle some more oil and cook for a few seconds. 
  • Remove from flame and serve with curries or chutneys. I served it with chicken curry

TIP: You can also add chopped capsicum also with paneer.
