Its summer holidays and I'm sure your kids would be bugging you for some different snack recipes. Taking them out everyday is practically impossible, so here is a rescue recipe for such moments 😀 These cute little potli samosas are something that they will fall in love for sure and you can make it with few things that is readily available in your pantry. You can make variations with the fillings, instead of potato stuffing you can also use minced meat or fruits also. I have given a basic, subtle and easy recipe here, you can make it spicier or flavorful as you wish. Lets now see how to make the easy samosa potli recipe using potatoes. Have included a video also do check it out to understand better 😊
INGREDIENTS
Makes 6 to 8 potlis (depends on size)
- All purpose flour / Maida - 3/4 cup
- Potato - 2 (medium ones)
- Cumin seeds - 1/2 teaspoon
- Salt - As per taste
- Coriander leaves - Few (optional)
- Oil - To deep fry potlis
PREPARATION METHOD
- Boil potaoes or you can steam them. Do as you'd do for your regular cooking. I always use the pressure cooker to cook potatoes. Just wash well and pressure cook them for 10 minutes on low flame. If they are too big chop into big cubes and then pressure cook them.
- Slightly dry roast the cumin seeds and keep aside.
- Meanwhile prepare the dough. Mix flour, 1/4 teaspoon salt salt, one teaspoon oil (or vanaspathi or butter) and sprinkle water. Mix well and make a nice smooth dough like we do for making pooris and chapatis. Keep aside covered.
- Remove potatoes from flame and wash under cool water and peel the skin it should come off easily if it has got cooked well.
- Add it into a bowl along with cumin seeds, coriander and salt. Mash and mix well and keep aside.
- Now pinch small balls from the dough and flatten them nice and thin using the rolling pin. Cut out small round discs using a round cookie cutter or even use a knife.
- Now take one round disc and fill it with the potato mixture. Slightly wet the edges (not really necessary but helps seal the edges well) and close the potli bags as shown in the video.
- Press at the neck firmly yet gently. Then make a small dough strip and wrap it around the neck of the potli. Set aside.
- Repeat the same with the rest of the dough.
- Now place a frying pan on flame and pour enough oil to deep fry the potlis. After the oil heats up, slide in the potlis gently and fry on a low flame until it turns crisp and golden brown.
- Remove from flame and serve hot with ketchup or chutneys.
TIP 1: Change the filling as you like, you can use meat or vegetables or even fruits. Just make sure your fillings are not watery, if so the potlis will turn soggy.
TIP 2: Make sure that you make thinner dough disks as it will make your potlis crispy.
TIP 3: You can make the stuffing spicy by adding red chilli powder, but for that you will have to cook the potatoes with masala first and then use for stuffing, or follow this recipe for the stuffing part.
